Gluten Free Chocolate Chip Cookies
Easy to Make, Easier to Eat: Gluten Free Chocolate Chip Cookies
Ingredients
- 1 & 1/2 cup almond flour 
- 1/2 cup of oatmeal 
- 1/2 teaspoon of baking soda 
- 1/4 teaspoon salt 2 tablespoons of coconut oil or butter 
- 1/4 cup of nut butter (almond, cashew or peanut) 
- 1/2 cup of coconut sugar or xylitol 
- 1 egg 
- 1 teaspoon vanilla extract 
- 1/2 cup of chocolate chips 
- Dash of sea salt 
Preparation
This recipe has a been a hit with my family and friends during the “stay at home” time because it’s so fast and easy to make.. and it’s even more delicious!
- Preheat the oven to 180C. 
- Whisk sugar, coconut oil, and nut butter until well combined. 
- Add the egg and vanilla. Continue to whisk. 
- In a separate bowl, mix the almond four, oats, and baking soda. 
- Add the dry ingredient bowl into the liquid ingredient bowl. Mix until well combined. 
- Mix in the chocolate chips with a spatula. 
- With a tablespoon, make the balls and flatten them lightly on the baking sheet prepared with parchment paper or greased with coconut oil. 
- Bake the pan and bake for 12-15 minutes or until lightly browned. The cookies come out of the oven soft and become firm as they cool. Optionally, lightly sprinkle just a dash of sea salt over the top of the cookies. 
Watch out for the little cookie monsters! Enjoy!
