Chef Ludmila Maia Nelson, Founder & CEO, Blisfuel

Rooted in Brazil’s rich culinary traditions, Chef Ludmila “Mila” Maia Nelson grew up understanding food as culture, care, celebration, and energy. That spirit still guides her work today: food should nourish deeply, taste beautiful, and bring more vibrancy into everyday life.

Before becoming a chef, Mila built a successful career as an attorney. Her legal background still shows up in the way she works: thoughtful, precise, deeply prepared, and able to turn complex needs into practical, elegant plans. Eventually, her lifelong love of food led her from the world of law into the kitchen, where she began building a culinary path shaped by craft, wellness, and global inspiration.

Mila trained at Chicago’s Kendall College and continued her culinary education through the Natural Gourmet Institute and the Institute of Culinary Education in New York. Her experience includes health-focused kitchens and world-class culinary environments, including Chef Alex Atala’s acclaimed D.O.M. in São Paulo, recognized among the World’s 50 Best Restaurants.

Her travels through South America, Europe, Asia, and Africa have deepened her culinary perspective, bringing together vibrant ingredients, regional traditions, and a global sense of flavor. From Brazilian roots to international kitchens and markets, Mila’s food is layered, colorful, generous, and deeply connected to place.

Over time, Mila’s culinary work expanded into holistic cuisine, Ayurvedic nutrition, culinary nutrition, and food therapy. This foundation shapes her modern approach to wellness through food: practical, joyful, evidence-informed, and designed for real life.

During the pandemic, Mila launched Ahava, a critically reviewed pop-up brunch restaurant in Brazil that blended Brazilian and American influences with a fresh, health-forward point of view. It was a natural expression of what continues to guide her work: food can be nourishing and joyful, intentional and generous, refined and deeply human.

Blisfuel was born from Mila’s belief that wellness should never feel clinical or joyless. Food can support longevity, energy, digestion, metabolism, and daily confidence while still feeling beautiful, satisfying, and full of pleasure.

For individuals and families, Mila creates chef-led meal plans, private culinary classes, pantry resets, and longevity-focused food experiences shaped around real routines, tastes, and wellness goals. Her work can support a wide range of dietary needs, including gluten-free, GLP-1-supportive, plant-forward, functional nutrition, and other personalized approaches to eating well.
